More than telling you about Pellegrino Artusi, we ask you to read his work. His book, Science in the Kitchen and the Art of Eating Well can be downloaded for free from the website of the Casa Artusi, the museum and cultural centre that the city of Forlimpopoli dedicated to its most famous son. At the time of his death, the book was already in its 15th edition. His success never came to an end and Artusi’s book remains absolutely the most widely read Italian book on cooking.
Artusi took on the task of uniting thousands of Italian traditions in a single national cookbook. He did not seek to homogenise regional cooking, but to enhance its identity. Today, Italian cooking is changing, thanks to both the influence of numerous ethnic traditions and the globalisation of tastes. For how long will we still talk of the language of Artusi?
