Sicily, Trapani, Scopello: “Dressed bread”

Pane Cunzato: literally: pane-bread / cunzato-dressed. A simple but very rich recipe: long loaves of homemade bread are cooked in wood-burning ovens. When they are ready they are cut lengthwise and stuffed with oil, salt, oregano, sliced tomato, cheese and anchovies. An unmissable nibble!
